THE GIBRALTAR

This drink started showing up in The Mission district in San Francisco a few years ago and is named after the glass that it is served in, a 5-1/2-oz Gibraltar rocks glass. It’s the same glass that most roasters use in their cupping rooms to “cup” coffees.

Prepare micro-foam milk using whole milk, a small pitcher works best. I recommend 150 degree milk for this drink because of the hot espresso to milk ratio and for ease of handling the glass.  Next pull two shots directly into the glass. Free pour the milk and serve.
